FIONA'S LEMON SLICE RECIPE
Ingredients:

1/2 cup sweetened condensed milk
125g butter
250g arrowroot or Marie biscuits (or rich tea will do)
1 tsp lemon rind
1 cup coconut

For icing:

1 3/4 cup icing sugar
3 tblspn lemon juice
15g butter
2 tblspn coconut

1. Melt condensed milk and butter in a saucepan.
2. Crush biscuits finely, add rind and coconut and mix well.
3. Add butter mixture and mix with hand. (Be careful here and make sure the butter mixture has slightly cooled or you'll burn your fingers!)
4. Press into greased 28cm x 18cm tin
5. Refrigerate for 1 hour.
6. Combine icing sugar, juice, soft butter. Mix well until smooth and spread over slice.
7. Sprinkle coconut on top.
