JOHN'S LEMON SPONGE CAKE
Ingredients :

Cake -
6oz Margarine
6oz Caster Sugar
6oz Self-Raising Flour
3 Eggs
1 Lemon

Butter Icing -
4oz Icing Sugar
2oz Butter
Juice of 1 Lemon

For Cake:
1. Cream together the caster sugar and margarine.
2. Add the lightly beaten eggs.
3. Sift in the flour and fold in with a metal spoon.
4. Grate the rind of the lemon into the mixture.
5. Add squeeze of lemon.
6. Grease and line a cake tin.
7. Bake at Gas Mark 4 for about 30 minutes

For Icing:
Cream together the butter, icing sugar and lemon juice.
